    Beth's Brunswick Stew

    List of Ingredients

    2 - 16 ounce cans of whole tomatoes, processed in the food processor or blender
    2 cans of creamed corn (NOT whole corn)
    1 - 14 1/2 ounce can of BBQ pork
    2 - 10 ounce cans of BBQ beef
    1 1/2 cups chopped, cooked chicken
    1 large onion

    Recipe



    Brown onion in about 2 tablespoons oil. Add the rest of the ingredients and mix well. Bring to a boil, watching carefully so as not to burn. Turn down heat as low as possible (use a burner trivet if you have one). Stir often to prevent sticking. Cook 30-45 minutes. Let sit for at least 2 hours to blend flavors. Reheat very slowly, stirring often to prevent sticking.

    Serve with garlic bread and green salad, fruit salad or slaw.
