    SWEET NOODLE KUGEL

    List of Ingredients


    • one 1 lb. pkg. of wide Noodles, cooked & drained
    • one 8 oz. pkg of Cream Cheese, cut into small chunks
    • one 24 oz. tub of Cottage Cheese
    • one 10 oz. jar Applesauce
    • six Eggs, beaten
    • one cup Raisins
    • 1-1/2 cups white granulated Sugar
    • one whole stick Butter, melted
    • ground Cinnamon
    • ground Nutmeg


    Instructions


    1. Put 6 to 8 Quarts of Water in a large boiling pot on high to boil, then bring out your 9" x 13" metal or glass baking pan;


    2. Place oven shelf to the middle of your oven and preheat your oven to 350 degrees Fahrenheit;


    3. Transfer Cream Cheese, Cottage Cheese, Applesauce, Eggs and Butter from your refrigerator to your table/countertop to let them all come as close to room temperature as they can while you're waiting for the water to boil and the oven to preheat (and, while your waiting, cut the entire 8 oz pkg of Cream Cheese into around 5 to 8 small chunks before it gets too soft for you to do so, and mix the Cottage Cheese and Applesauce thoroughly in their containers so they won't be watery when you add them into the recipe mixture);


    4. When the water is at a full boil, place the entire 1-lb. pkg of wide Noodles into the pot (just one or two of the dry noodles at first to prevent boil over, and then add the rest of the noodles), then put the whole stick of butter into your 9" x 13" pan and put it into the preheated oven to melt it right in the pan... then in a medium-sized mixing bowl beat the six Eggs thoroughly (make sure it's NOT the Large mixing bowl you're going to mix the entire noodle recipe in because the eggs don't go in first);


    5. Drain the fully cooked wide Noodles completely and put them into a large to very large mixing bowl;


    6. Mix in the entire pkg of Cream Cheese (that you cut into small chunks) until the Cream Cheese is almost entirely melted;


    7. Then mix in the Cottage Cheese, thoroughly;


    8. Then mix in the beaten Eggs, thoroughly;


    9. Then mix in the entire 10 oz jar of Applesauce, thoroughly;


    10. Then mix in the entire 1-1/2 cups of Sugar, thoroughly;


    11. Then mix in the entire 1-cup of Raisins, thoroughly;


    12. Then mix in the ground Cinnamon and the ground Nutmeg (to your taste), thoroughly;


    13. Cover pan with foil and bake at 350 degrees Fahrenheit for one hour;


    14. Then uncover pan and bake another 30 minutes longer;


    15. Makes 12 Servings.



    Final Comments


    Ms. Pauline Miller of Massachussetts uses crushed "Frosted Flakes" crumbs which she adds a little of the melted butter to for moistening, then adds it to the top of the Noodle Kugel in the pan which, she says adds a really nice and sweet crunch!!
