    SOUTH CAROLINA BOILED P-NUTS

    CROMER'S P-NUTS (Est. 1935) of Columbia, South Carolina (USA)


    List of Ingredients


    • 5 lbs. green or dried RAW PEANUTS (still in shells)
    • 12 oz Salt
    • Water


    Instructions


    1. Wash the Peanuts in clear cool water;

    2. Place the unshelled Peanuts in a very large boiling pot and cover them with Water so there's AT LEAST one or two inches of water covering the peanuts;

    3. Use 12 oz. of Salt for every 5 lbs. of Peanuts you boil (adjust salt for your taste);

    4. During the boiling process, keep the Peanuts ALWAYS covered with water;

    5. Cooking time will vary depending on the amount of Peanuts you are boiling and also the 'type' of Peanuts you are boiling - dried raw Peanuts will take longer than green raw (new crop) Peanuts... "dried" raw peanuts will take about six to seven hours of boiling time until they're done, and green raw peanuts takes around three to four hours of boiling time before they're done;

    6. Periodically use a large spoon to get a Peanut to sample to find out if it meets your desired taste and softness;

    7. Let the Peanuts sit in the salt brine 30 to 60 minutes before serving or, if you prefer eating them cooled, after letting the finished Peanuts sit in the salt brine for 60 minutes, drain them and let them cool further to room temperature then just shell 'em and eat 'em!!

    8. YIELD: Ten 1/2-lb Servings

    9. Keep uneaten Boiled P-Nuts refridgerated in a cold refridgerator at all times -- this is absolutely necessary.

    10. For everybody's clarification... "dried" raw peanuts are peanuts that have been dried in a dehydrator, but haven't been roasted or cooked in ANY way at all... and green raw (new crop) peanuts are totally RAW peanuts in every way in that they haven't even been dried in a dehydrator.



    Final Comments


    Five lbs. of raw Peanuts will yield ten 1/2-lb servings. Since the salt is mighty plentiful in this recipe, heart attack victims must BEWARE... but these ARE incredibly delicious!!
