Ginger Chicken- Bacon Bites

12 ounce boneless, skinless breasts
1/4 cup orange marmalade
2 Tablespoons soy sauce
1/2 teaspoon ground ginger
1/8 teaspoon garlic powder
8 ounce can whole water chestnuts
12 slices bacon
Recipe
Cut chicken breasts into 24 bite-size pieces
Combine marmalade, soy sauce, ginger and garlic powder in a medium size mixing bowl. Add chicken pieces, cover and chill for 30 minutes.
Arrange bacon slices on unheated rack of broiler pan; broil 4 to 5 inches from heat for 1 to 2 minutes or until partially cooked but not crisp. Drain on paper towel. Cut in half crosswise.
Cut water chestnuts in half, crosswise. Drain chicken pieces. Wrap each piece of bacon around a chicken piece and a chestnut half. Secure with a wooden toothpick. Place on the unheated rack of broiler pan. Broil 4 to 5 inches from heat for 3 to5 minutes or until chicken is no longer pink in the middle, turning once. Makes 24.
You can fix the chicken pieces in the marinade the day before, take them out of the fridge to drain while doing the rest.
