    CHEF SIDNEY'S MASHED POTATO OMELETTE

    List of Ingredients

    1 oz. butter
    pinch salt & pepper
    1.5 oz. bacon, diced & pre-cooked
    1/2 chopped Scallions
    4 large eggs
    4 oz. mashed potatoes
    2 oz. grated cheddar cheese
    1.5 oz. sour cream

    Recipe

    Heat butter in omelette pan. Add bacon, salt & pepper; heat.

    Add scallions and toss.

    Add eggs and cook until the eggs are set, pulling the sides in to speed the cooking process.

    On dinner plate, place mashed potatoes in the center.

    Top potatoes with grated cheddar cheese. Lay eggs flat on top of potatoes and cheese.

    Top with a dollop of sour cream, and serve.
