    1 cup buttermilk
    1 teaspoon soda
    5 eggs - seperated
    2 cups sugar
    1 stick butter
    1/2 cup shortening
    2 cups sifted all purpose flour
    1 tsp vanilla extract
    1 cup chopped pecans
    1 small can coconut


    CREAM CHEESE FROSTING
    1 - 8oz pkge of Phili cream cheese
    1 stick butter
    16 oz confectioners sugar
    1 tsp vanilla

    Recipe



    Preheat oven to 325 degrees.
    Combine soda and buttermilk and let stand for a few minutes. Beat egg whites until stiff. Cream butter, shortening and sugar. Add egg yolks one at a time, beating well after each addition. Add buttermilk alternately with flour mixing well after each addition. Stir in
    vanilla. Fold in egg whites, gently stir in pecans and coconut. Bake in 3 - 9 inch greased and floured pans at 325 degrees for 25 minutes or until cake is done.

    FROSTING:
    Cream cheese and butter well. Add vanilla. Beat in sugar a little at a time.
