1 TBS margarine or butter
4 boneless, skinless chicken breasts
3 cloves garlic, minced
2 cups water
3/4 cup uncooked rice
2 chicken bouillon cubes
1 lemon, halved
1 1/2 cups frozen veggies mix (broccoli, carrots, and cauliflower)
1 small can of diced pineapples (optional)Recipe
Melt margarine in large nonstick skillet. Add chicken and cook overmedium high heat 5-7 mins until light brown. Add garlic and cook briefly. Add water, rice, bouillon cubes, and juice from half lemon.Bring to a boil. Cover, reduce heat, and simmer 20 mins. Add broccoli,carrots, and cauliflower and continue cooking until vegetables are
cooked to your desire. Slice other half of lemon and add as garnish. Add pineapple and serve.
