    MEXICAN CASSEROLE

    List of Ingredients

    1 pound turkey light meat, skinless -- ground
    1/2 cup green pepper -- chopped
    1 medium onion -- chopped
    2 cups stewed tomatoes -- chopped
    1 teaspoon garlic -- chopped
    1 package chili seasoning
    2 cups white rice -- cooked
    8 ounces jalapeno cheese -- grated
    salt and pepper -- to taste

    Recipe

    Brown turkey add onion, green pepper, garlic, tomatoes and
    seasonings. Simmer until liquid evaporates. Add rice and 1/2 of cheese. Stir well and pour into 9 X 13 baking pan. Add remaining cheese to top and bake 350° till cheese is melted and slightly browned.
