TEX-MEX TURKEY POTATO BOATS

List of Ingredients
2 Large potatoes baked
1/2 Pound GROUND TURKEY
1/2 Cup onion chopped
1 Clove garlic minced
1 Can (8 ounces) stewed tomatoes
1 Teaspoon chili powder
1/4 Teaspoon dried oregano
1/4 Teaspoon cumin
1/4 Teaspoon red pepper flakes
1/4 Teaspoon salt
1/2 Cup Cheddar cheese grated
Recipe
1. Slice baked potatoes in half, lengthwise. Scoop out center of each potato to within 1/4-inch of potato skin. Reserve potato for another use.
2. In medium skillet, over medium-high heat, combine turkey, onion and garlic. Cook 5 minutes or until turkey is no longer pink; drain meat juices if necessary. Add tomatoes, chili powder, oregano, cumin, red pepper flakes and salt. Cook 15 minutes or until most of liquid has evaporated.
3. Spoon turkey mixture into potato shells and sprinkle with
cheese. On 9-X 13-X 2-inch jellyroll pan, bake shells in a
preheataed 375 degree F oven for 15 minutes or until cheese melts.
