APPLE OMELET (A VERY DELICATED DISH)

6 large tart apples
1 tbsp butter
1 cup sugar
cinnamon, nutmeg, and mace to taste
(you may wish to add other spices of choice)
4 eggs
Recipe
Peel the apples. Cover with water and cook until apples are very soft. Drain apples and beat out any lumps that remain. You want a smooth texture. Add the butter, sugar, and spices of choice. Mix well. Allow to cool. Beat in the eggs. Transfer to a shallow, buttered baking dish and bake at 300 degrees for 15 to 20 minutes or until light delicate brown.
