    CRUST:
    18.25 oz box lemon cake mix
    1 egg, separated
    3 tbs. butter
    2 tsp grated lime rind
    2 tbs. lime juice
    FILLING:
    3 egg yolks
    1 can 14 oz sweetened condensed milk
    2/3 cup lime juice
    2 tsp grated lime rind
    CRUMB:
    3/4 cup reserved lemon cake mix
    1/2 cup pistachios, chopped
    2 tbs butter

    Recipe



    Heat oven to 350 degrees. Line 13X9X2 inch baking pan with foil coated with cooking spray. CRUST: Set aside 3/4 cup cake mix. In bowl, combine remaining cake mix,egg white, butter, rind and juice. Beat until crumbs form. Press over bottom of prepared pan. Prick with fork. Bake 15 min. FILLING: In bowl, beat 4 yolks, until slightly thickened, stir in milk, beat in juice, stir in rind. CRUMB: In bowl, combine reserved cake mix, and nuts. With hands work butter into cake mix mixture, until crumbs form. Remove crust from oven. Pour filling over crust. Sprinkle with crumb. Bake 15 min. Let cool in pan. Refrigerate 2 hours. Using ends of foil, lift bar from pan. Cut into 48 pieces. MAKES 48 SERVINGS. Serve with ice cream if desired.
