    CHICKEN WITH HERB RUB

    List of Ingredients

    1/2 cup frest mint leaves, chopped
    2 to 4 teaspoons fennel seeds, crushed
    2 tablespoons sesame seeds
    2 teaspoons dried thyme
    1 teaspoon salt
    1/4 teaspoon freshly ground pepper
    4 boneless, skinless chicken breast, halves
    1 tablespoon olive or vegetable oil

    Recipe

    1. Heat oven to 350 degrees. Combine all ingredients except chicken and oil in a small bowl. Rub herb mixture over both sides of chicken.
    2. Heat oil in a 12" nonstick, ovenproof skillet over medium-high heat. Add chicken and cook 3 mins per side, until brown. Transfer chicken in skillet to oven. Bake 8 to 9 mins, until cooked through.
