    ROAST CORNISH HENS, GARLIC MASHED POTATO

    CORNISH HENS: HEAT OVEN TO 400 DEGREES. Cut 2 cornish hens in half, remove backbones with kitchen scissors. In bowl, mix 2 tbs. oil, 1 1/2 tsp each paprika, ground cumin and minced garlic and 1/2 tsp each salt and
    pepper, brush all over hens. Place breast side up on rack in roasting pan. Roast 45 min.

    MASHED POTATOES: Prepare 6 servings instant mashed potatoes, replacing water with 14 oz can roasted garlic seasoned chicken broth and using an additional 1/4 cup milk.

    SWISS CHARD: Heat 2 tsp oil in skillet,
    add 2 tsp minced garlic, saute 1 min. Add 1/2 cup water, bring to a boil, Add 2 bunches green or red swiss chard, leaves and stalks cut in small pieces. Simmer
    uncovered 10 min. until leaves wilt and stalks are tender. Season with salt and pepper.*
