    PASTA-CRAB SALAD

    List of Ingredients

    6 oz. vermicelli
    2 Tbsp. peanut oil
    1 red or green pepper, cut into thin strips
    2 cloves minced garlic
    3 green onions, sliced thin
    6 oz. crabmeat (imitation works best)
    1 small head romaine lettuce, torn into pieces
    2 1/2 Tbsp. soy sauce
    2 1/2 Tbsp. red wine vinegar
    1/2 tsp. sugar
    1/8 to 1/4 tsp. cayenne pepper

    Recipe

    Cook vermicelli; dran and transfer to serving bowl. Heat 1 tablespoon oil in heavy skillet. Add red (or green)pepper and garlic. Stir-fry until just limp. Add green onion and stir another 30 seconds. Do not overcook!

    Combine vermicelli, red pepper-green onion micture, crabmeat, and lettuce in a large bowl.

    In small bowl whisk together 1 tablespoon oil, soy sause, vinegar, sugar, and cayenne pepper. Pour over pasta mixture and toss gently.
