    CHIPOTLE TOMATO SALSA

    List of Ingredients




    2 cans 28 oz each diced tomatoes, drained
    1 red onion, chopped
    1/2 sweet green pepper, cored, chopped
    3 cloves garlic, thinly sliced
    2 cannned chipotle chiles in adobo sauce, seeds removed and chopped
    2 tbs lime juice
    1 tbs each adobo sauce from can, olive oil, and sugar
    1 tsp each oregano and salt
    1/2 cup cilantro leaves, chopped

    In bowl, stir together tomatoes, onion, green pepper, garlic, chipotle chilies, lime juice, adobo sauce, olive oil, sugar, oregano, and salt. Stir in chopped cilantro. Store in jars in refrigerator for up to 2 weeks.*
