BASIC TAQUITOS

24 corn tortillas
melted lard or olive oil
about a cup of favorite refried beans that have been blended until smooth
about 2 cups of finely chopped beef, pork or chicken, seasoned to taste favorite cheese, cut into thin slivers a bit shorter than the tortillas are wide
Recipe
Soften the tortillas 2 or 3 at a time by lightly frying them in lard or olive oil until soft but not brown and crisp, or by wrapping in a tea towel and nuking for about a minute. Spread the softened tortillas thinly with
the refried beans. Then lay one of the slivers of cheese at one end of the tortilla. Add a thin line of the finely chopped meat. Roll the tortilla up as tightly as possible. Set aside on a flat dish with the seam side
down. Continue until all tortillas are filled and rolled. Heat about a half inch of lard or olive oil to frying temperature and fry several of the taquitos
at a time until crisp and nicely browned on both sides, turning with a pair of kitchen tongues.
Place on paper towels to drain. Serve warm with Guacamole
for dipping.
