ALBONDIGAS (A MEAT BALL SOUP)

List of Ingredients
1 lb. ground beef
2 roased and peeled chilies or 1 can green chilies
1 diced tomato
1 tsp. oregano
1 small onion, diced
Salt and pepper to taste
1/4 c. rice
Garlic and red pepper flakes (can be added - optional)
Recipe
Mix all together and form into balls, about 1 inch. To prepare soup, brown 1/4 cup rice in 2 tablesppons oil with small amount of onion. When rice is brown, add 2 quarts water and bring to a boil. Add meat balls and simmer for at least 30 minutes or longer. Serv with warm tortillas or chips.
