    2 pounds chicken wings
    2 carrots, cut into pieces
    1 onion, cut into eighths
    1 cup dry white wine
    12 cups water
    12 black peppercorns
    1 bay leaf
    1 chicken bullion cube
    1/4 tsp salt
    1 pkg 9 oz cheese tortellini
    1 bag 6 oz spinach
    2 tomatoes, diced
    Grated Parmesan cheese

    HEAT OVEN TO 350 DEGREES. Place chicken, carrots and onion in roasting pan. Roast 1 hour. Transfer chicken, carrots, onion to pot. Place roasting pan over heat, add white wine pour into pot with chicken. Add water, peppercorns, bay
    leaf. Bring to boiling. Simmer, uncovered 1 1/2 hours. Pour broth through strainer placed over bowl. Discard carrots, onion, peppercorns and bay leaf. Refrigerate broth. Remove skin and bones from meat. TO SERVE: Remove fat from surface of broth, In pot, bring broth to simmering, add bullion cube and salt, tortellini, spinach, tomatoes, and chicken meat cook until spinach wilts and tortellini is done. Sprinkle with Parmesan.*
