WHITE BEAN CHICKEN CHILI

In skillet, heat 1 tbs olive oil, add 1 cup chopped onion, saute until softened, 5 min. Add 2 tsp chopped garlic, 1 3/4 pounds chicken tenders, cut into quarters, and 1/2 tsp of the taco seasoning mix to the onion, cook 5 min. Stir
the remaining of the packet of taco seasoning and 1 cup water into the chicken mixture. Bring to boiling. Add 1 can 13.75 oz artichoke hearts, drained, cut into quarters, 1 cup diced fresh tomatoes, and 1 can 15 oz white beans,
drained. Simmer, uncovered, 5 min. GARNISH with 1 tbs chopped cilantro.*
