Okra Muffins
2 cups self-rising cornmeal
1 T. sugar
1/2 tsp salt
1 1/4 cups buttermilk
2 large eggs, beaten
1/4 cup vegetable oil
1 tsp. worcestershire sauce
1/4 tsp red hot sauce (louisianna)
2 cups thinly sliced okra
1/4 cup finely diced onion
Combine dry ingredients.. add next 5 ingredients, stirring until moistened.
Fold in okra and onion..Spoon into muffin tins and bake.. 400 degrees for
20 minutes..
makes 1 1/2 dozen
