    Easy Crab Cakes

    2/3 cup mayonnaise
    1 T. lime juice (fresh)
    1/2 tsp. red pepper + 1/2 tsp black pepper
    12 oz. shredded crabmeat..(fresh, canned or imitation)
    1 cup seasoned breadcrumbs
    1 (2oz) jar pimento
    2 T. finely chopped celery + 2 T. finely chopped onion
    Butter or margarine (for browning)

    Mix all ingredients, only 1/2 of breadcrumbs.. shape into patties or cakes (8)
    Coat with remaining breadcrumbs and brown in butter, about 3 minutes on each side.

    Lime Sauce:

    1/2 cup mayonnaise
    1/2 cup sour cream
    1 T. lime juice
    2 tsp grated rind
    horseradish (opt)

    Mix all well and serve with hot crab cakes
