Easy Bread & Butter Pickles
Bread & Butter pickles
16 cups of sliced cuccumbers
6 med onions (peeled and sliced thin)
1/3 cup pickling salt or coarse salt (I have used
regular table salt and had no problems with it)
Sprinkle the salt over the the prepared cucumbers
and onions in a large dish. Cover this with ice cubes.
Let this stand for 3 hours.
Drain the pickles and rinse them off with cold water.
The pickles should be drained well.
You will need:
3 cups of vinegar
5 cups of white sugar
1 1/2 tsp. turmeric
1 1/2 tsp. celery seeds
2 tbsp. mustard seeds
Bring this mixture to a boil. Now add the cucumber
and onion mixture. Boil for 5 mins. Bottle the pickles
while hot. The pickles are best after they have set
6 weeks.
