    Mimi's
    French Silk Pie

    Crust:
    3 egg whites
    pinch of salt
    1 c sugar
    1/2 c pecans
    1/4 tsp cream of tartar

    Filling:
    1/2 c butter (use the real stuff)
    1 oz baking chocolate, melted and cooled slightly
    3/4 c sugar
    2 very fresh eggs

    whipping cream for top


    Preheat to 275.

    Beat egg whites, cream of tartar and salt until stiff. Gradually add sugar.

    Add pecans. Bake at 275 for 1 hour.

    Remove from oven and let cool.

    Filling:
    Beat the butter, chocolate and sugar well.

    Add 1 egg, beat for 5 minutes.

    Add second egg, beat 5 more minutes.

    Pour into cooled pie shell.

    Top with whipped cream.

    Keep refrigerated.
