Bacon and Potato Fritatta

An easy to do but quite satisfying recipe. The girls at Cheers! really liked this one.
List of Ingredients
4 slices bacon, chopped
2 lg potatoes 1/2'' piecec-3 cups
1 small onion- minced
1/4 tsp ground pepper
3/4 tsp salt
6 large eggs
4 oz swiss cheese( or asiago or gouda)
1 cup whole milk
1/3 cup bisquick
2 Tblsp butter-melted Recipe
Pre heat oven to 375
Grease 10'' quiche dish or 9x9 glass dish. Cook bacon intil crisp. Drain. Discard all but 1 Tblsp grease. Add potatoes, onion, and 1/2 tsp salt aand pepper. Cook until potatoes are done. Add bacon. ( I have used canned potatoes which works well.)
Mix eggs, grated cheese, milk, bisquick, butter and 1/4 tsp salt. Pour into glass dish and spoon potatoes over top. Bake 20-30 minutes or until knife inserted in middle comes out clean.
