Recipe Introduction
This is slightly adjusted to our liking. Made this first when some of the kids and Mom were coming for dinner. We all liked them but they were a little vinegary. Adjusted that slightly and we are happy with them now.
List of Ingredients
- 6 large baking potatoes
- 4 Tblsp butter
- 1/2 cup evaporated milk(can use whoel milk)
- 3 Tblsp mayo
- 2 Tblsp sour cream
- 1 cup cheddar cheese
- 1/4 cup parmesan cheese
- 1 Tblsp worcestershire sauce
- 2 tsp lemon juice (fresh preferred)
- 1/2 tsp balsamic or red wine vinegar
- salt, pepper, seasoned salt
- 2 cloves garlic (minced)
- 8 slices bacon
Instructions
- Bake or microwave potatoes. Mix other ingredients in a bowl.
- Scoop potato into bowl with other ingredients. Mix all together in food processor
- Add extra sour cream if it appears too dry.
- Refill boats- Bake @350 for 20-30 minutes.
Final Comments
I often do these the night before and just reheat before serving. Serve with extra sour cream. These also freeze well.
