Spring Vegetable Risotto

Recipe Introduction
This recipe is pretty much fool proof. I don't have many recipes for the microwave but this one was a keeper.
List of Ingredients
- 3 Tblsp butter
- 3 Tblsp fruity olive oil
- 1/2 cup chopped scallions (onions)
- 2 stalks celery chopped(peeled if necessary)
- 1/2 cup flat leaf parsley -chopped
- 2 cups arborio rice
- 4 cups chicken broth
- 3/4 lb asparagus- in 2 in lengths
- 3/4 cup frozen or fresh peas
- 1-2 tsp kosher salt
- 1/2 tsp fresh ground pepper
- 1/4 cup chopped green onion
- 1/2 cup grated parmesan cheese
- 1 lb medium shrimp( cut in half crosswise)
Instructions
- In microwave oven heat butter and oil in 14x11 dish, uncovered at 100% for 3 minutes
- Add scallion whites, celery, parsley, and rice. Stir.
- Microwave uncovered for 4 minutes. Stir in broth and cook uncovered for 13 minutes.
- Add asparagus, shrimp and peas, stir well. Cook uncovered for 13 minutes more.
- Remove from oven. Stir in salt and pepper.
- Cover loosely w/ paper towel and stand for 8 to 10 minutes. Uncover, sprinkle with green onions and parmesan.
- Serve.
Final Comments
Check for firmness after the final 13 minutes and cook slightly longer if necessary
