    Recipe Introduction


    This recipe is pretty much fool proof. I don't have many recipes for the microwave but this one was a keeper.


    List of Ingredients


    • 3 Tblsp butter
    • 3 Tblsp fruity olive oil
    • 1/2 cup chopped scallions (onions)
    • 2 stalks celery chopped(peeled if necessary)
    • 1/2 cup flat leaf parsley -chopped
    • 2 cups arborio rice
    • 4 cups chicken broth
    • 3/4 lb asparagus- in 2 in lengths
    • 3/4 cup frozen or fresh peas
    • 1-2 tsp kosher salt
    • 1/2 tsp fresh ground pepper
    • 1/4 cup chopped green onion
    • 1/2 cup grated parmesan cheese
    • 1 lb medium shrimp( cut in half crosswise)


    Instructions


    1. In microwave oven heat butter and oil in 14x11 dish, uncovered at 100% for 3 minutes
    2. Add scallion whites, celery, parsley, and rice. Stir.
    3. Microwave uncovered for 4 minutes. Stir in broth and cook uncovered for 13 minutes.
    4. Add asparagus, shrimp and peas, stir well. Cook uncovered for 13 minutes more.
    5. Remove from oven. Stir in salt and pepper.
    6. Cover loosely w/ paper towel and stand for 8 to 10 minutes. Uncover, sprinkle with green onions and parmesan.
    7. Serve.


    Final Comments


    Check for firmness after the final 13 minutes and cook slightly longer if necessary
