    Cooking Light - July / August 1996 Page 128

    List of Ingredients

    • 1 tablespoon margarine
    • 1 1/4 cups chopped onion
    • 3/4 cup chopped green bell pepper
    • 2 garlic cloves -- minced
    • 1 (16-ounce) can red beans -- drained (I use only Bush's)
    • 1 (15.8-ounce) can Great Northern beans -- drained (Again only Bush's)
    • The Sauce portion of the recipe
    • 1 cup reduced-calorie ketchup
    • 1/4 cup firmly packed brown sugar
    • 1/4 cup maple syrup
    • 2 tablespoons Worcestershire sauce
    • 2 teaspoons barbecue smoke seasoning (such as Liquid Smoke)
    • 2 teaspoons prepared mustard
    • Ed's Barbeque Sauce
    • 1 cup Ketchup
    • 1/4 cup Lemon Juice
    • 3 Tablespoons Worcestershire sauce
    • 2 Tablespoons Red Wine vinegar
    • 2 Tablespoons Brown Sugar (to taste) -- (2 to 4)
    • 1 Teaspoon Sea Salt
    • 1/4 Teaspoon Pepper
    • 1/2 Teaspoon Liquid Barbecue Smoke
    • 1/4 Cup Light Molasses
    • In a bowl combine all the ingredients and mix well, serve immediately or refrigerate for later use.

    Instructions

    1. Melt margarine in a medium sauce-pan over medium-high heat.

    2. Add onion, bell pepper, and garlic; saute 4 minutes.

    3. Stir in ketchup and remaining ingredients; bring to a boil. Reduce heat; simmer 15 minutes, stirring occasionally.

    Final Comments

Our Lodge Chaplain just can't get enough of these beans. I don't mind, because they are easy to make, and I love'em too! They're the best beans I've had, except for Mom's, of course, but her recipe is gone.

As good as this recipe is, and it is. I use a recipe for Ed's barbeque sauce in this recipe, and everyone thinks that his BBQ sauce makes it better.
Where the Sauce portion begins in the ingredients below is where I would stop and just add Ed's sauce.
I use about 1 1/2 cups of this sauce, a little less maybe. I start with a cup and add as I go along until it looks right to me.
The Recipe for Ed's BBQ sauce is in the Sauce Section too.
If you don't want to mess with making your own sauce recipe I would suggest using some Ken Davis Barbeque Sauce, (you can buy that at the grocery store.)
