    In my book Cooking Light recipes are always very good, and this Cake recipe is one example. The fact that it is a Cooking Light recipe is shared only with good cooks who ask for the recipe and the health conscious who want to know.

    List of Ingredients




    1 cup all-purpose flour
    3/4 cup granulated sugar
    3 tablespoons unsweetened cocoa
    2 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup fat-free milk
    1 teaspoon vanilla extract
    1 cup packed brown sugar
    3 tablespoons unsweetened cocoa
    1 1/2 cups hot water

    Recipe




    Preheat oven to 350º.

    Lightly spoon flour into a dry measuring cup, and level with a knife.
    Combine the first 5 ingredients in a medium bowl. (Flour through Salt)
    Stir in milk and vanilla extract.
    Spoon the batter into a 9-inch square baking pan.
    Combine brown sugar and 3 tablespoons cocoa, and sprinkle over cake batter.
    Pour water over batter (do not stir).
    Bake at 350º for 40 minutes or until cake springs back when lightly touched in center.

    Serve warm.

    Serves 12

    This always makes a hit down at the Lodge, and the sisters of the Star really like it too.
