    1 15 - 17 LB Fresh Ham
    3/4 teaspoon Garlic Powder
    1 1/2 teaspoons Salt
    1 1/2 teaspoons Black Pepper
    2 Cups Hickory Wood Chips, Soaked in water, and
    then drained.

    Recipe




    Preheat Oven to 350 degree Farenheit.

    Line a roasting pan with Aluminum Foil; place the ham "Skin Side Up" in the pan.

    In a small bowl, combine the garlic powder, salt, and pepper; mix well - then rub evenly over the ham.

    Bake for 4 hours, basting occasionally.

    Preheat the Grill to Medium heat.

    If using a charcoal grill, place the wood chips on the hot charcoal. - If using a gas grill, place the woodchips in a disposable aluminum pan directly on the heat surface, (under the grill rack.)

    Place the ham on the grill, (keeping it in the roasting pan.)

    Cover the Grill and cook for one (1) hour, or until browned, and a meat thermometer inserted in the center registers 170 degrees farenheight.

    Remove to a cutting board and slice.

    Serves 20

    Serving Ideas : Slice and serve for a sit down dinner, or slice and serve on buns for some great pork sandwiches along with Potato Salad, and beans for a fine picnic.

    A little sauce prepared to put on the meat is good for those who want it.

    NOTES : This is an excellent recipe and way to have a pig roast for a family gathering, when you don't want or need to cook a whole pig. With two ovens and two grills you can make two recipes and serve about 40 to 50 people. I have made this numerous times and I like the process and the result. This will make a hit with everyone present.
