    This recipe can easily be adapted to a larger number of servings.

    List of Ingredients




    1/4 Cup Lemon Juice (or soy sauce if preferred)
    1/4 Cup Cold Water
    1 Tablespoon Cornstarch
    1 Pound Boneless Sirloin Steak, cut into thin strips
    3 Tablespoons Olive oil divided (Vegetable oil?)
    2 Small Onions -- Thinly sliced into rings
    2 Celery Ribs, -- Sliced kind of thin
    1 Green Pepper (another color works good
    too) -- Cut into 1 inch pieces
    2 Fresh Roma Tomatoes, -- Cut into wedges
    Hot cooked rice

    Recipe





    Combine Lemon Juice, (or soy sauce) Water, and Cornstarch: Set aside.

    In a large skillet or wok over high heat, stir fry half of the beef in 1 Tablespoon of Oil until browned. Remove and repeat with the remaining Beef, adding more oil as needed. Remove Beef and keep warm.

    Add onions, Celery, and Green Pepper to pan; Stir fry until crisp - tender, about 3 - 4 minutes.

    Return Beef to pan.

    Stir Lemon Juice mixture and add to pan.

    Cook and stir for 2 minutes or until sauce is thickened and bubbly.

    Add Tomatoes; Heat through.

    Serve over rice.

    I like to use lemon juice instead of Soy Sauce.

    I do add about 3 squirts or so of Liquid Aminos for a little of the Oriental Flavor though and because of this there is no need to add salt or pepper to the meat or to the dish.

    Also adding an extra Green Pepper is good. I like to use Red, or Orange, Or Yellow Bell Peppers instead of Green because of the better flavor and the added color.

    I also slice and add 8 ounces of fresh mushrooms to the Onion and Bell Pepper Mixture, I think it adds something nice to the dish. But it would be O.K. without the mushrooms too.
