List of Ingredients
- 1 About 4 Pounds Boneless Chuck, or Sirloin Tip Roast
- 1 Large Onion -- Thinly sliced & rings seperated
- 3 Stalks Celery -- Chopped, or thin sliced
- Ed's BBQ Sauce
- 1 Cup Ketchup
- 1/4 cup Lemon Juice
- 3 Tablespoons Worcestershire sauce
- 2 Tablespoons Red Wine vinegar
- 2 Tablespoons Brown Sugar
- 1 Teaspoon Sea Salt
- 1/4 Teaspoon Pepper
- 1/2 Teaspoon Liquid Smoke
- 1/4 Cup Light Molasses
Instructions
- Pre heat the oven to 250 degrees
- Place the roast in a roasting pan that has a cover for it. I like the old Blue Enamled roaster, it works well with this recipe.
- Top with onion.
- Prepare the BBQ Sauce, and it over the roast.
Cover the Roaster, and place in a preheated 250 degree oven.
- Bake at 250° for 5 hours
Do not open lid to peek at the meat, because this will reduce the liquid juices and make the dish to dry.
- Remove Roast and Cool slightly; Allow 15 minutes to cool
Shred Meat with 2 forks.
- Skim fat from cooking liquid.
- Return meat to roaster, and place back in ovem to heat through.
- Serve on Hard Rolls
- Using a slotted spoon, place 1/3 cup meat mixture on each roll. Yield: 24 servings
