    List of Ingredients


    • 1 About 4 Pounds Boneless Chuck, or Sirloin Tip Roast
    • 1 Large Onion -- Thinly sliced & rings seperated
    • 3 Stalks Celery -- Chopped, or thin sliced
    • Ed's BBQ Sauce
    • 1 Cup Ketchup
    • 1/4 cup Lemon Juice
    • 3 Tablespoons Worcestershire sauce
    • 2 Tablespoons Red Wine vinegar
    • 2 Tablespoons Brown Sugar
    • 1 Teaspoon Sea Salt
    • 1/4 Teaspoon Pepper
    • 1/2 Teaspoon Liquid Smoke
    • 1/4 Cup Light Molasses


    Instructions


    1. Pre heat the oven to 250 degrees
    2. Place the roast in a roasting pan that has a cover for it. I like the old Blue Enamled roaster, it works well with this recipe.

    3. Top with onion.
    4. Prepare the BBQ Sauce, and it over the roast.

    5. Cover the Roaster, and place in a preheated 250 degree oven.
    6. Bake at 250° for 5 hours
      Do not open lid to peek at the meat, because this will reduce the liquid juices and make the dish to dry.

    7. Remove Roast and Cool slightly; Allow 15 minutes to cool

      Shred Meat with 2 forks.

    8. Skim fat from cooking liquid.

    9. Return meat to roaster, and place back in ovem to heat through.

    10. Serve on Hard Rolls

    11. Using a slotted spoon, place 1/3 cup meat mixture on each roll. Yield: 24 servings
