    2/3 cup + ! Tablespoon Sugar
    2 Large Eggs
    2 Medium Firm Juicy Apples, peeled Cored & finely Chopped
    1 1/2 Cups All-Purpose flour
    2 teaspoons Baking Powder
    1 3/4 teaspoons Cinnamon
    1 teaspoon Baking Soda
    1/4 teaspoon Ground allspice
    1/4 teaspoon salt
    1/8 teaspoon ground Clove
    1/4 cup Canola oil

    Place the oven rack in the center of the oven. Preheat Oven to 400°

    Spray a 12 cup muffin tin with non-stick spray, or line with paper cups

    Whisk together 2/3 cups sugar and the eggs in a large bowl. Stir in the Apples, and let stand 10 minutes to render their juices.

    Meanwhile whisk together the flour, baking powder, 1 1/2 teaspoons of the cinnamon, the baking soda, allspice, salt, and cloves in a medium bowl.

    Stir the Oil into the Apple Mixture. Then fold in the flour mixture until just moistened. (the batter will be lumpy)

    Spoon into the muffin cups, filling them 2/3 full.

    Bake until a toothpick inserted in the center comes out clean - about 15 minutes.

    Let cool on a rack 3 minutes, then remove from the pan and cool slightly on a rack. Serve Warm.

    4 W W Points with nits 3 W W points w/o nuts.

    Store the muffins in an airtight container at room temperature for up to 4 days. or wrap them individually in foil and freeze them in a zip close plastic bag for up to one month. Just pop into toaster oven at 250° until warmed through - about 15 minutes.
