    2/3 cup + 1 Tablespoon Packed Brown sugar - divided
    1/4 cup + 2 teaspoons Cornmeal, divided
    2 cups All-purpose flour
    1 teaspoon Baking Soda
    1 teaspoon Baking Powder
    1/4 teaspoon Salt
    1 cup Vanilla Low-fat Yogurt
    2/3 cup fat-free milk
    2 Tablespoons stick butter, or Margarine, -- Melted
    1 teaspoon Vanilla Extract
    1 large Egg -- Lightly beaten
    cooking Spray

    Preheat oven to 400°

    Combine 1 Tablespoon brown sugar and 2 teaspoons cornmeal in a small bowl. Set aside.

    Lightly spoon flour into dry measuring cups; level with a knife. Combine flour 2/3 cup brown sugar, 1/4 cup cornmeal, baking soda, baking powder, and salt in a medium bowl.

    Make a well in the center of the mixture.

    Combine yogurt and next 4 ingredients, (milk, butter, vanilla, & egg,); add to flour mixture, stirring just until moist.

    Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle brown sugar mixture evenly over muffins.

    Bake at 400° for 20 minutes. Remove muffins from pans immediately; place on wire rack.

    Yield 1 dozen. (serving size 1 muffin)
