    1 cup Low Fat Buttemilk
    3/4 cup bud-style Bran Cereal (such as Bran Buds,
    100% Bran, or Fiber One)
    1/2 cup Golden Raisins
    1/2 cup Shredded Carrot
    1 Egg
    1/3 cup Honey
    1/4 cup Canola oil
    1 teaspoon Vanilla Extract
    1 cup Whole Wheat Flour
    1 teaspoon Baking Soda
    1 teaspoon Ground Cinnamon
    1 Tablespoon Honey-Crunch wheat germ -- optional

    Recipe




    Preheat oven to 425° Line a 12 cup muffin pan with paper liners. Coat with cooking spray.

    In a medium bowl, combine the buttermilk, cereal, raisins, carrots, egg, honey, oil, and vanilla. Let stand for15 minutes.

    In a lage bowl combine the flour, baking soda, and cinnamon. Make a well in the center.

    Add the buttermilk mixture. Stir just enough to moisten the flour.

    Divide the batter evenly among the muffin cups. Sprinkle the tops with wheat germ, if using.

    Bake at 425° for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
