    Adapted from a Mayo Clinic Recipe

    List of Ingredients




    2 Cups `Flour
    1/2 Cup Sugar
    1 1/2 teaspoons Baking Powder
    1/2 teaspoon Baking Soda
    1/2 teaspoon Sea Salt
    2 Eggs
    2 Tablespoons Oil
    2 Tablespoon Unsweetened applesauce
    2 teaspoons Grated Orange peel
    3/4 Cup Orange Juice
    1 1/4 Cups Finely Chopped Rhubarb

    Preheat oven to 325 - Use dark pan

    Combine flour, sugar, baking powder, baking soda, and salt, in a bowl.

    In another Bowl, combine eggs, oil, applesauce, orange peel, and orange juice

    Add mixture to dry ingredients all at once and stir until moistened

    Stir in Rhubarb

    Spray muffin tin with non-stick spray. Fill muffin cups almost to the top

    Bake 20 to 30 minutes.

    NOTES : This batter is good to use with other fruit for muffins such as; Blueberries, & Cranberries.
    I like to double the recipe. These are god breakfast muffins.
