    2 teaspoons Olive oil
    1 teaspoon dried Oregano
    1 Large Clove garlic -- Minced
    3 Cups Diced Tomato
    1/2 Cup sliced Green onions
    1/4 Cup chopped fresh Parsley -- divided
    2 Tablespoons Lemon Juice
    4 Cups hot cooked Thin Spaghetti cooked without salt or fat
    1 Cup crumbled Feta cheese -- 4 ounces
    Freshly Ground Pepper to taste

    Recipe





    Heat oil in a large nonstick skillit over medium - high heat.

    Add Oregano and Garlic, and saute 30 seconds.

    Add Tomato, Onions, 2 Tablespoons Parsley, and Lemon Juice; cook 2 minutes or until heated.

    Combine Tomato mixture, Spaghetti, and 3\4 cup Feta Cheese; toss gently.

    Top with remaining 1/4 cup of Feta Cheese, and 2 Tablespoons of Parsley, and sprinkle with pepper.

    Yield 4 servings of 1 1/4 cups each

    Serving Ideas : Serve with a nice Greek style, or Italian style salad. And a nice side dish of Spinach or other type of Vegetable. Breadsticks or a Hardroll.

    NOTES : We think sprinkeling the top of the finished dish with finely chopped Chives would be good, and also unsing Italian Seasoning instead of ground pepper would be preferable as some people have a reaction to pepper.
