    Betty Crocker - Bisquick Cookbook

    Recipe Introduction

This is a great dish, and it can be increased to serve a large group. Whereever I serve this dish I'm always asked for the recipe.

    List of Ingredients

1/4 cup fat-free cholesterol free egg product or 1 egg
I prefer to use the One Egg
    2 Tablespoons Water
    1 cup reduced fat Bisquick
    1/4 teaspoon Garlic Powder
6 small boneless, skinless chicken breast halves about 1 1/2 pounds
    cooking spray
    4 medium cloves Garlic - Chopped -- 2 teaspoons
    1 Tablespoon Chopped Gingerroot
4 medium green onions chopped -- 1/4 cup
    1 Tablespoon Sugar
    1 Tablespoon Soy Sauce
    1 Tablespoon Rice Vinegar
1 Tablespoon Cooking Sherry - if desired
    2 teaspoons toasted Sesame oil

    Recipe

Heat oven to 425°. Spray jelly roll pan, 15 1/2 x10 1/2x1 inch, with cooking spray. Beat egg and water slightly.

Mix Bisquick and garlic powder. dip chicken into egg mixture, then coat with bisquick mixture.

Place chicken in pan & spray chicken with cooking spray.

Bake 20 minutes. Turn Chicken; spray with cooking spray. Bake about 10 minutes longer, or until juice is no longer pink when centers of thickest pieces are cut.

Spray 10 inch non-stick skillet with cooking spray; heat over medium high heat.
Cook Garlic, and gingerroot in skillet 2 minutes, stirring constantly.
Add remaining ingredients, (Green onions, sugar, soy sauce, rice vinegar, & sherry)

    cook 1 minute, stirring frequently.

    Spoon sauce over chicken.

Serves 6, but less than that if they are men. Most men want 2 Breasts.

Note: I recommend doubling the Sauce recipe. It's great and people generally like a little extra sauce.
Garnish plate with cucumber salad if desired. Score & slice Cucumbers, 1/4" slice. Top Cucumbers with chopped Red Onion, A sprinkling od toasted sesame seeds and a splash of red wine vinegar.
