Pickled Garlic

List of Ingredients
6 heads garlic -- keep them whole
4 cups white wine vinegar
4 Tablespoons Sugar
1 teaspoon whole black peppercorn
4 whole clove
2 small chili pepper -- dried
1 bay leaf
1 lemon rind -- cut into strips
Recipe
use a non-corosive pan
peel all but the one layer of the pepery skin from the garlic heads - keep them whole.
combine all the ingredients, except garlic, into pan and bring to a boil over high heat and boil for 2 minutes to blend the flavors.
Then add the garlic heads and boil for 4 minutes.
remove the pot from the heat, cover and allow it to sit overnight in the refrigerator
transfer everything into an airtight container and store in refrigerator for up to 1 month.
NOTES : Pickled Garlic is a real treat for any garlic lover.
