List of Ingredients
2 Cups Pumpkin Puree
3/4 to 1 Cup Maple Syrup depending on sweetness of Pumpkin
3 Tablespoons Light Olive Oil
2 Cups Whole Wheat Pastry Flour -- White W W Flour
1 teaspoon Baking Soda
1/2 teaspoon Sea Salt -- optinal
1/4 teaspoon Ground Cloves
1/4 teaspoon Powdered Ginger
1 teaspoon Cinnamon
3/4 Cup Walnuts, Chopped -- optinal
Recipe
Preheat Oven to 350°
Mix together Pumpkin Puree, Maple Syrup, and Olive OIl.
Sift together Flour, baking soda, salt (if desired,) and Spices.
Add Walnuts.
Blend dry ingredients into wet ingredients until just mixed.
Divide batter equally among 12 cups of nonstick Muffin Pan.
Bake for 45 Minutes. Remove from oven. Cool slightly. Remove Muffins from pan.
Yield: "1 Dozen"
