3 gallons of elderberries
2 gallons of water
3 lbs sugar
1 oz cloves
1 oz ginger
T yeast
Recipe
Strip berries clean from stalks and put them in a tub. pour boiling water on them. Press berries down into liquid. Cover them closely. Let them remain until the next day. Drain and strain juice from berries and squeeze them for all they have.
Mix in the sugar, ginger and cloves. Boil twenty minutes. Keep completely skimmed.
While still hot, pour into a cask or large bottles. Fill entirely and set the wine immediately with the yeast into the bung hole and stirred around.
