List of Ingredients
forty pounds of honey
ten gallons of water
seven and a half ounces of hops or fifteen yeast cakes
one quart brandy or sack.Recipe
Boil the water and honey forty five minutes. Add hops and boil thirty minutes longer. If yeast is used, cool to lukewarm and crumble yeast in. Let stand overnight. Add brandy or sack and pour into a cask. Cover with an oversize lid and let stand until fermentation is complete. Then cover tighly and seal. Let stand a year and bottle.
