Recipe Introduction
Curaçao (pronounced /ˈkjʊərəsaʊ/ in English) is a liqueur flavoured with the dried peel of the laraha citrus fruit, grown on the island of Curaçao. A non-native plant similar to an orange, the laraha developed from the sweet Valencia orange transplanted by Spanish explorers. The nutrient-poor soil and arid climate of Curaçao proved unsuitable to Valencia cultivation, resulting in small bitter fruit on the trees. But the aromatic peel maintained much of the essence of the Valencia varietal, and the trees were eventually bred into the current laraha cultivar, whose fruits remain inedibly bitter.

4 large Valencia oranges
1 tsp whole coriander seeds
1 C pure grain alcohol or vodka
1 C water
2 T orange juice from the oranges
1 1/2 C simple syrup
Recipe
Turn oven to warm. Peel the orange peel from oranges with no white pith. Dry it in the oven for 1 hour. Let cool. Crush coriander seed coarsely.
Place seeds in a quart jar. Add the orange peel, alcohol ans water. Add orange juice and stir to combine. Cover and age 2 weeks, shaking once or twice.
Strain through cloth bag. Add simple syrup and store in a Fifth bottle.

3 tablespoons Bitter orange peel
1 Dozen Valencia or navel Oranges
2 2/3 cup 80 proof vodka
1 1/3 cup Water
2 cups White sugar
12 Whole cloves
1 teaspoon Ground cinnamon
2 teaspoons whole coriander seeds
