    Makes 1 quart.
    Make a simple syrup of 1 cup sugar and 1 cup water by bringing them to a boil over medium high heat. Lower heat, stirring frequently, to prevent scorching. When it becomes clear, remove from heat and let cool until just warm. Combine syrup, 2 1/2 cups dark rum, 4 tsp vanilla, 12 crushed whole allspice, 1/2 teaspoon ground cloves, 1/2 tsp nutmeg and 2 cinnamon sticks. Cap the bottle and let set in a cool dark place for 3-4 weeks. Strain in a fine mesh strainer and serve or age 1 month more.
