8 eggs,
2 1/2 C bar sugar (real fine granulated or powdered sugar)
1 pkg Knox gelatine
peppermint oil or vanilla extract
Recipe
Dissolve gelatine in 1/2 cup water hot water in double boiler, and cool until syrupy.
Beat egg whites until stiff. Add 2 cups sugar, 2 tablespoons at a time. Beat egg yolks and add remaining 1/2 cup sugar. Stir in cooled gelatine. Add peppermint oil or vanilla to taste. Fold whites and yolks together.
