* 1 lb mochiko sweet rice flour
* 2 1/2 cups sugar
* 2 teaspoons baking powder
* 1/2 cup butter or margarine, melted
* 3 cups milk
* 5 eggs, beaten
* 2 teaspoons lemon extract
* 1 teaspoon vanilla
* 1 cup flaked coconut
Recipe
1. Preheat electric oven to 350°F
2. Grease a 13 x 9 x 2-inch pan.
3. In a large bowl, combine mochiko, sugar, and baking powder.
4. Add remaining ingredients; mix well.
5. Pour into prepared pan.
6. Bake for 1 hour; cool.
7. Cut into small squares and serve with other appetizers.
