Recipe Introduction
Use black olives, green olives, Greek olives, stuffed or unstuffed.
Preheat the oven to 425 degrees F.
List of Ingredients
3 C mixed olives of your choice
1 C cherry or grape tomatoes
1 C small, sweet, Greek red peppers, cut in half
2 garlic cloves chopped
1 tsp snipped rosemary
1 tsp snipped thyme
1 tsp chopped basil
1/4 tsp oregano
1/4 C olive oil
2 grinds on the pepper mill of mixed peppercornsRecipe
Combine the seasonings and oil in a bowl. Add remaining ingredients and stir to coat well. Place on a cookie sheet and bake for 20 minutes or until the peppers and tomatoes begin to shrivel and look leathery. drain and cool.
