    Shrimp-blue cheese Appetizer

    This makes 4-5 dozen, depending on the size of the shrimp.

    List of Ingredients




    2 pounds cleaned and deveined large shrimp
    1 T Old bay, or other pickling spice
    1 qt beer (opt)
    1/4 pound blue cheese
    4 oz cream cheese
    1 tsp grated onion
    1 tsp prepared mustard
    1/4 tsp minced rosemary, or to taste
    1 tsp horseradish
    1 C finely chopped parsley for garnish

    Recipe



    Tie the pickling spice in a cheesecloth and cook with the shrimp in salted beer (or water) until just pink. Drain and chill.
    Filling;
    Combine the filling ingredients.
    Split the shrimp down the back until almost, but not quite through the shrimp, as you would to butterfly. Stuff with the filling mixture. Dip the cheese side into the parsley. Chill.
