Barbequed Whole Fish

Oregon Trawlfish and shrimp
List of Ingredients
1 (3-5 pound) whole fish, with head on
2 cloves garlic
1 T salt
2 T soy sauce
1/4 C lemon juice
1/4 C bourbon or cognac
1/2 C vegetable oil
slivers of ginger root
lime or lemon wedges
toasted sesame seeds
Recipe
Press the garlic in a garlic press, and mix with salt. Rub inside the fish with salt mixture. Combine soy sauce, lemon juice, bourbon, vegetable oil and ginger. Brush fish with mixture and let stand for one hour or more, turning occasionally. (reserve remaining sauce). Place fish in oiled mesh rack. Larger fish can be placed directly on oiled grill rack. Cook 2-3 inches from hot coals for about 10 minutes per side. Baste with reserved sauce, and turn only once. Garnish with lemon or lime and sesame seeds.
