    Jalapeno Burgers & Pico de Gallo Relish

    List of Ingredients




    Relish;
    1 medium white onion,finely diced
    2 jalapenos or 3 serrano chiles, very finely diced
    1/2 medium green bell pepper, very finely diced
    1 large tomato, juiced seeded and very finely diced
    1/4 C fresh cilantro leaves, finely minced
    1 T lime juice
    Burgers;
    3 T finely minced, seeded serrano or jalapenos (to Taste)
    2 pounds ground beef (15-20 percent fat)
    salt and pepper to taste
    1 C shredded cheese, a mix of pepper jack & longhorn
    6 hamberger buns

    Recipe



    Combine all of the relish ingredients and set aside.
    Preheat grill to high. Mix chiles into meat, using disposable gloves, handling only as much as necessary. Form into patties. Season with salt and pepper. Grill on both sides to desired doneness, or 160 degrees on meat thermometer. About 2-3 minutes from being done place cheese on top to melt. (If using lava rock, add cheese after removing from grill, if the cheese melts into the lava rock you will have to replace it. Lindas note). Serve on buns with the relish spooned on top.
