    ROLL, BOHEMIAN KOLACHY OR SWEET

    List of Ingredients

    2 C milk, scalded
    2 pkg. dry yeast
    1 C butter
    1 C sugar
    1 tsp. salt
    3 eggs, beaten
    1 C lukewarm water
    About 6 C flour



    Recipe

    Dissolve yeast in warm water. Cream sugar, shortening, eggs and salt. Mix together. Add flour and knead a few minutes. Put in greased bowl and let rise, about 1 hour until double. Divide in parts to work on floured board, roll to 1/4 inch. Cut with cookie cutter and place on greased cookie sheet. Grease top and sides with butter and let rise about 30 minutes.

    Make a depression in center with fingers, pushing dough to sides and fill with 1 tablespoon filling. Bake at 350 degrees for 15-20 minutes. When brown, remove and brush sides with butter.

    Filling; (from Oregon prune exchange. Forest grove, OR.)
    Apricot.
    1/2 pound dried apricots
    1/3 C sugar
    1 1/2 C water
    1T butter
    Wash apricots in cold water. Place in a saucepan with sugar and water, heat to boiling, reduce heat, cover and simmer 45 minutes. When cool puree, and add butter. Makes 1 1/2 cups.

    Prune.
    1/2 pound pitted prunes
    1/4 C sugar
    1 1/2 C water
    1/2 tsp grated lemon rind
    1/16 tsp cloves
    1/8 tsp allspice
    1 T butter
    Wash prunes, place in saucepan with sugar and water. Heat to boil, reduce heat, cover and simmer 45 minutes. Cool, drain off juice and save. Puree and add remaining ingredients. If too thick, add some reserved juice.

    Poppy seed;
    1 cup poppy seed
    1/2 cup milk
    1/4 cup honey
    1/3 cup chopped dates
    1/3 cup chopped nuts
    Dash of cinnamon, (optional)

    Note;
    My original recipe called for rolling the dough out in one piece, It will fill the kitchen table. The dough was then cut into squares (about 4 inch) filled to 1/2 inch of edges, topped with another square, sealed edges with egg wash and baked. There is something about this method that involves stretching the gluten.
